I love an easy recipe and this one is just that! The ingredients that you will need to make this Vegan Walnut Chili are 2 tablespoons of olive oil, 1 diced sweet onion, 1 diced red bell pepper, 2 cups of chickpeas, 4 ounces of green chiles, 6 Roma tomatoes that are chopped into bite-sized pieces, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 tablespoon of chili powder, 1 teaspoon of salt, 1 teaspoon of black pepper, 6 cups of vegetable broth, and 1 cup of finely chopped walnuts.
Cooking this Vegan Walnut Chili should take only about 30 minutes. To make it, heat the olive oil in a large pot over medium-high heat. Then, saute the diced onion and diced red bell pepper for 5 minutes. Next, add the chickpeas, green chiles, tomatoes, garlic powder, onion powder, chili powder, salt, black pepper, broth, and finely chopped walnuts. Beautiful Recipe , Only change I made was to take an Immersion Blender to 1 1/2 cups of soup and add it back for a thicker based Chili . Family ate it all up with Corn Muffins !

I will definitely try this but not with chichi beans since my husband won’t eat them. I will probably use white beans.
