This delicious chicken fajita chowder recipe is perfect for any kind of occasion. It is easy to prepare, flavorful and filled with exciting ingredients.

Ingredients

  • 2 tbsp 2 olive oil

  • 1 red 1 bell pepper (diced)

  • 1 1 onion (diced)

  • 2 cloves 2 garlic (minced)

  • 1 tbsp 1 chili powder

  • 1 tsp 1 cumin

  • 1/2 tsp 1/2 oregano

  • 1/4 tsp 1/4 salt

  • 1/4 tsp 1/4 pepper

  • 2 cups 2 chicken broth

  • 2 cups 2 cooked, diced chicken

  • 1 4 ounce 1 can of diced green chilies

  • 1 large 1 tomato (diced)

  • 1 15 ounce 1 can of hominy

  • 1 cup 1 corn kernels (frozen)

  • 2 tbsp 2 lemon juice

  • 1/2 cup 1/2 fresh cilantro (chopped)

  • Optional garnish with grated cheese, thinly sliced jalapenos and sour cream

Directions

  • Heat olive oil in a large pot over medium-high heat.
  • Add red bell pepper and onion and cook, stirring occasionally, for 3-4 minutes until vegetables soften.
  • Add garlic and cook for an additional minute.
  • Add chili powder, cumin, oregano, salt and pepper, stirring to combine.
  • Pour in chicken broth, cooked chicken, green chilies, diced tomatoes, hominy, and corn kernels. Stir to combine.
  • Bring chowder to a boil. Reduce heat and simmer for 15-20 minutes.
  • Add lime juice and cilantro and stir to combine
  • Garnish with grated cheese, thinly sliced jalapenos, and/or sour cream.
