Avocado, Tomato and Cucumber Salad

You might be familiar with this recipe. This is a recipe that I have been making for many years now. When you Google Avocado, Tomato, and Cucumber Salad, you will find a lot of similar recipes to this one. They all include the same main three ingredients, avocado, tomatoes, and cucumbers. However, the dressings used for them typically vary. This particular recipe that I am sharing with you today calls for a homemade red wine vinegar dressing. It’s rather easy and quick to create. Let’s get started!

Ingredients

  • 1 1 whole avocado, cut into chunks

  • 2 cups 2 cherry tomatoes, cut in half

  • 2 2 Persian cucumbers, sliced

  • 1/4 cup 1/4 red onion, chopped

  • 1 tablespoon 1 olive oil

  • 1 1/2 teaspoons 1 1/2 apple cider vinegar

  • 1 1/2 teaspoons 1 1/2 red wine

  • 1 teaspoon 1 fresh lemon juice

  • Salt and pepper, to taste

Directions

  • In a bowl, mix together olive oil, apple cider vinegar, red wine, fresh lemon juice, salt and pepper.
  • Add avocado, sliced tomatoes, and red onion.
  • Toss to coat evenly.
  • Serve and Enjoy!

Notes

  • The longer you allow the dressing to sit on the salad, the more flavorful it will become.

The ingredients that you will need to make this recipe are 1 whole avocado, sliced into chunks, 2 cups of sliced cherry tomatoes, 2 sliced Persian cucumbers, ¼ cup of chopped red onion, 1 teaspoon of olive oil, ½ tablespoon of apple cider vinegar, ½ tablespoon of red wine, 1 teaspoon of fresh lemon juice, salt, and black pepper, to taste. 

To make this salad, grab out a large bowl and mix together the olive oil, apple cider vinegar, red wine, lemon juice, salt, and pepper. Add the sliced avocado, sliced tomatoes, and red onion. Toss everything around so that it gets coated evenly. Finally, Serve and Enjoy! Please note, that the longer you allow the dressing to sit on the salad, the more flavorful it will become. No need to worry about the avocado browning. That won’t happen quickly since the acidity from the lemon juice and vinegar help to prevent that. 

The dressing measurement might seem small, but trust me when I tell you that they are just right. For this Avocado Tomato Cucumber Salad, you only need a light coating of dressing. It does not need to be drenched in the dressing. You may also use red wine vinegar in place of red wine and vinegar. 

Red onion helps to give this salad a bit of kick. If you do not like the taste of onion, then feel free to omit that ingredient from the recipe. I love red onions so I sometimes even add a little extra. If you like red onions then this recipe will have just enough for your liking!
