Cauliflower Soup

I was about 8 years old when I first tasted cauliflower soup. My parents happened to be visiting relatives who had the most exquisite way of cooking food. I was always excited to find out what kind of dish we were going to get to sample that day.

On this particular day it was a creamy cauliflower soup that was presented to us. My first impression of the soup was one of confusion as I had no idea what it was.

After my parent sufficiently explained that it was a kind of vegetable, I slowly took a spoonful with some hesitation and I tasted it. I was surprised to find that the soup had an extremely comforting and creamy taste that I quite enjoyed.

That moment changed my opinion on cauliflower and I started to understand why everyone was raving about it. I am now a devote cauliflower soup fan and can never refuse a bowl of it when offered at a restaurant. I’ve since started to create my own version, and I’m sharing my recipe with you.

Ingredients

  • 1 small 1 head of cauliflower, chopped into florets

  • 2 tbsp 2 olive oil

  • 1 1 yellow onion (diced)

  • 3 cloves 3 garlic (minced)

  • 4 cups 4 vegetable broth

  • 1 pinch 1 of nutmeg

  • 1 pinch 1 pepper

  • 2 pinch 2 salt

  • 2 tbsp 2 butter

Directions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic and sauté for about 2 minutes, or until the onion becomes translucent.
  • Add the chopped cauliflower florets and stir to combine.
  • Pour in the vegetable broth and bring to a simmer.
  • Simmer for about 20 minutes, or until the cauliflower is tender.
  • Remove from heat and, using an immersion blender, blend until smooth.
  • Stir in the butter and nutmeg and season with salt and pepper.
  • Serve warm and enjoy!

  • Using an immersion blender is optional, you can serve as desired.
