Coconut Cookie Parfaits

Calling all Coconut Lovers! This recipe is one that is made specifically for you. These Coconut Cookie Parfaits are so easy to make and they hit every single sweet tooth that you could possibly have. Before I get into the nitty-gritty of how to make this recipe, let me tell you how I created this recipe.

Ingredients

  • 1/2 cup 1/2 crushed coconut cookies

  • whipped cream (in the spray can)

  • 1/4 cup 1/4 shredded coconut

  • For Serving: 2 parfait glasses

Directions

  • Layer ingredients in this order: crushed cookies, whipped cream, shredded coconut. 
  • Repeat until all ingredients are used.
  • Be sure to make the top and final layer the shredded coconut. Serve and Enjoy!

I created this recipe this past Summer 2021. One warm summer night I was craving something coconut-flavored. However, I was not in the mood to bake so I knew that it had to be something quick. quick to make. I also did not feel like baking anything or waiting for my oven to preheat. So what did I do? I looked to my pantry of course to see what I could find. I soon realized I had some store-bought coconut cookies and all the other necessary ingredients such as shredded coconut and whipped cream to make something quick and unique. Thus, this yummy dessert was born!

The ingredients that you need to make these Coconut Cookie Parfaits are ½ cup of crushed coconut cookies, whipped cream, and ¼ cup of shredded coconut. To make these, first, layer the ingredients in the following order: crushed cookies, whipped cream, and shredded coconut. Then, be sure to repeat those layers until all of the ingredients are used. For a  crunchy finish, be sure to make the top and final layer the shredded coconut. Finally, Serve and Enjoy your delicious treat! It’s quick and easy. 

I made the ingredient measurements for this recipe enough to serve 2 people. However, feel free to adjust the quantities and measurements to your liking to suit your needs. If you like a lot more cookies, then try it that way. Or, if you want less shredded coconut then useless. Just be sure to crush up the coconut cookies into small bite-sized pieces (as pictured).
