Pepper Steak With Roasted Vegetables

I was around 16 years old when I first tasted pepper steak with roasted vegetables. We were on a family holiday to the south of France and I was experiencing a lot of different foods that I had never tasted before.

My father decided to whip up a traditional French style dinner one night while we were on holiday, which included this delicious pepper steak with roasted vegetables. He marinated the steak with a mix of freshly crushed pepper, garlic, oregano and olive oil, cooked it in a hot pan with butter, and roasted the vegetables in the oven.

I had never tasted food like this before, and I was truly blown away. The steak was succulent and tender and the vegetables were slightly caramelized and full of flavor. As I ate, I could taste all the individual ingredients combined together with the subtle sweetness from the roasted vegetables. I was in absolute food heaven.

To this day, it’s one of my favorite meals, and I’m so glad I had the opportunity to try it for the first time. Of course, now I’m sharing this recipe with you.

Ingredients

  • 2 tbsp 2 olive oil

  • 1 tsp 1 crushed pepper

  • 2 cloves 2 garlic (minced)

  • 1 tsp 1 oregano

  • 1 tbsp 1 butter

  • 2 lbs 2 boneless steak

  • 1 large 1 bell pepper (sliced)

  • 1 large 1 onion (sliced)

  • 2 large 2 potatoes (cut into cubes)

  • 2 tbsp 2 parsley (chopped)

Directions

  • In a medium bowl, combine the olive oil, crushed pepper, garlic and oregano. Stir until well mixed.
  • Set the steak in the marinade and let it sit in the refrigerator for at least 20 minutes.
  • Preheat the oven to 400 F
  • Melt the butter in a large oven-safe skillet over medium-high heat
  • Add the bell pepper, onion and potatoes to the skillet and cook, stirring occasionally, until the vegetables are slightly browned, about 10 minutes.
  • Add the steak to the skillet and cook until browned, about 5 minutes
  • Place the skillet in the preheated oven and cook until vegetables are tender and steak is cooked to desired doneness, about 15 minutes.
  • Sprinkle parsley over the steak and vegetables and serve.

Notes

  • You can add other ingredients such as carrots, zucchini, mushrooms or broccoli if you so desire.
