Penne Pasta With BBQ Pork

I had recently moved to a new city and was eager to explore the food options in the area. I had only heard good things about the local restaurants and was looking forward to checking them out for myself.

One evening, a friend invited me to a restaurant downtown for dinner. When the waiter brought us the menu, I was intrigued to see that he offered Penne Pasta With BBQ Pork. Thinking it sounded delicious, I decided to give it a try.

One of the best comfort meals around is BBQ Pork Penne Pasta. It is a hearty dish that is easy to make, full of flavor and perfect for any night of the week. It also makes for excellent leftovers that are sure to please as well. Make this dish and you’ll never be at a loss for what to make your family for dinner!

Ingredients

  • Pork
  • 2 lbs 2 pork tenderloin, trimmed and cubed

  • 2 cloves 2 garlic, minced

  • 1/2 cup 1/2 ketchup

  • 1/3 cup 1/3 low-sodium soy sauce

  • 2 tbsp 2 Worcestershire sauce

  • 1 tsp 1 paprika

  • 1/2 tsp 1/2 black pepper

  • 1 tsp 1 dried oregano

  • 1/2 tsp 1/2 garlic powder

  • Pasta
  • 2 tsp 2 olive oil

  • 1 1 onion (diced)

  • 1 1 bell pepper (diced)

  • 2 cloves 2 garlic (minced)

  • 1 tsp 1 dried oregano

  • 1 24 ounce 1 jar of marinara sauce

  • 2 cups 2 water

  • 2 cups 2 penne pasta

  • 2 tbsp 2 parsley (minced)

Directions

  • Pork Directions
  • Preheat the oven to 350 degrees F
  • In a medium bowl, combine garlic, ketchup, soy sauce, Worcestershire sauce, paprika, black pepper, oregano and garlic powder.
  • Place the pork cubes in baking dish and pour the marinade overtop.
  • Bake for 25-30 minutes, or until the pork is cooked through.
  • Pasta Directions
  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and bell pepper and sauté for 3-4 minutes, or until softened.
  • Add the garlic, oregano, salt and pepper, and cook for 1 minute.
  • Add the marinara sauce and water and bring to a boil.
  • Add the penne pasta and cook for 10-12 minutes, or until al dente.
  • Stir in the cooked BBQ pork and cook for 2-3 minutes, or until heated through.
  • To Serve
  • Garnish with parsley and serve.

Notes

  • To make it more spicy you can add your favorite “heat” source such as Cayenne or Cajun.
