Ingredients

  • 3 tbsp 3 olive oil

  • 1 large 1 onion, diced

  • 4 cloves 4 garlic, minced

  • 2 stalks 2 celery, diced

  • 2 2 carrots, diced

  • 2 cups 2 dry split peas, rinsed

  • 8 cups 8 vegetable broth

  • 1 1 bay leaf

  • 2 tsp 2 dried thyme

  • 1/2 tsp 1/2 teaspoon black pepper

Directions

  • Heat olive oil in a large pot over medium-high heat.
  • Add onion, garlic, celery, and carrots and cook until softened, stirring often.
  • Add split peas, vegetable broth, bay leaf, thyme, and black pepper and bring to a boil.

  • Remove the bay leaf and season with salt to taste.

Notes

  • You can also add chickpeas to have a mix of different pea flavors.
