I discovered this recipe while searching the internet for a delicious quesadilla recipe, but I’ve added my own spicy twist. Since I love the flavor combination of eggs and cheese, I knew that the classic scramble egg quesadilla would be a great meal for my family.

I gave it a try and it turned out better than I expected! I was immediately in love with the texture, flavor and ease of the dish. My family loves it too- in fact we can’t seem to get enough of it.

Ingredients

  • 8 8 eggs

  • 1/4 tsp 1/4 salt

  • 1/8 tsp 1/8 black pepper

  • 2 tbsp 2 butter

  • 4 large 4 tortillas

  • 3 cups 3 cups grated cheese (your choice of cheese)

  • 1 cup 1 diced tomatoes

  • 1 1 jalapeno pepper (diced)

  • 1 1 chopped onion

Directions

  • In a medium bowl, whisk together eggs, salt, and pepper.
  • Heat a large skillet over medium-high heat. Add butter and let it melt.
  • Add egg mixture to the skillet and cook until the eggs are scrambled and no longer runny.
  • On a large work surface, lay out 4 tortillas.
  • Top each tortilla with half of the grated cheese, diced tomatoes, chopped onion, jalapeno pepper, and scrambled eggs. Top each one with remaining cheese.
  • Carefully fold each quesadilla in half.
  • Heat a large skillet over medium-high heat. Place quesadilla in pan and cook until golden brown and cheese melted, about 2 minutes each side.
  • Serve immediately.

Notes

  • Don’t like spice? Simply remove the jalapenos from the recipe.
