Ingredients

  • 4 4 Mahi-Mahi fillets

  • 2 tbsp 2 olive oil

  • 2 cups 2 white long-grain rice

  • `1 `1 onion diced

  • 2 stalks 2 celery diced

  • 2 cloves 2 garlic minced

  • 2 cups 2 vegetable broth

  • 1 tsp 1 paprika

  • 1/2 tsp 1/2 onion powder

  • 1/4 tsp 1/4 cayenne pepper

  • 1/4 tsp 1/4 black pepper

  • 1/4 tsp 1/4 thyme

  • 2 tbsp 2 tablespoons parsley

Directions

  • Preheat oven to 350°F.
  • Heat olive oil in a large skillet over medium heat.
  • Add the onion and celery to the skillet and cook until tender, about 5 minutes.
  • Add the garlic and cook for an additional minute.
  • Add the rice and mix to combine.
  • Pour in the vegetable broth and stir to mix.
  • Add the paprika, onion powder, cayenne pepper, black pepper, thyme, and parsley and stir to combine.
  • Cover the skillet and reduce heat to low. Simmer for 20 minutes or until the rice is cooked through
  • Grease a baking sheet with non-stick cooking spray.
  • Place the Mahi-Mahi fillets on the baking sheet and sprinkle a pinch of salt, pepper, paprika, and onion powder on the fillets. Bake for 10 minutes or until cooked through.

  • You can season or marinate the fillets to your desired taste.
