Ingredients

  • 4 fillets 4 skinless and boneless (cod, hake or haddock work well)

  • 2 tbsp 2 Cajun seasoning

  • 2 tbsp 2 olive oil

  • 2 tbsp 2 butter

  • 1 tsp 1 garlic powder

  • 1 1 onion (finely chopped)

  • 2 stalks 2 celery (finely chopped)

  • 2 tbsp 2 all-purpose flour

  • 1 1/2 cups 1 1/2 2 % milk

  • 1/2 cup 1/2 crème fraiche

  • 1 cup 1 frozen peas

  • 1 pinch 1 salt

  • 1 pinch 1 pepper

  • 1 pack 1 ready-made shortcrust pastry

  • 1 beaten 1 for brushing

Directions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Generously season both sides of the fish fillets with the Cajun seasoning and set aside.
  • Heat the olive oil and butter in a large pan over a medium heat. Add in the garlic powder, onion and celery and cook for 5 minutes, stirring until softened.
  • Stir in the flour and cook for a further minute.
  • Gradually add in the milk, stirring continuously until the sauce is nice and thick.
  • Add in the crème fraiche and peas, stirring to combine. Season with salt and pepper and stir again.
  • Grease a 9-inch pie dish. Place the fish in the dish, followed by the sauce and mix gently to combine.
  • Roll out the pastry and place it over the top of the pie, trimming off any excess edges. Brush with the beaten egg to give it a lovely golden color.
  • Place in the preheated oven for 25 minutes or until golden and cooked through.
  • Let it cool, and serve warm.

  • Choose your favorite boneless, skinless, white fish. You can also add a variation of vegetables to the mix, for example, carrots and celery (chopped).
