There is something so therapeutic about making soup. Maybe it is the act of chopping the vegetables. Or, it could quite possibly be the aroma of the different elements of flavor boiling in one large pot. Your nose gets a whiff of the different flavor elements wafting through your kitchen. Making a healthy soup recipe is therapeutic for the mind, body, and soul.
This Lentil Soup is vegan. I have seen some Lentil Soup recipes that are made with chicken broth. However, most are made with vegetable broth or water. This one is made with vegetable broth.
This soup is quite therapeutic to make. It’s also easy to whip up. Just be prepared to do a bit of slicing, chopping, and dicing. I find that part to be quite fun. Do you like chopping vegetables? If you find chopping vegetables to be a bit tedious, then you can always purchase your veggies pre-chopped from your local market.
The ingredients that you will need to make this delicious soup are 2 tablespoons of extra virgin olive oil, 2 large diced carrots, 2 stalks of chopped celery, 1 small diced onion, 2 tablespoons of garlic powder, 2 teaspoons of dried Italian seasoning, 14 ounces of diced tomatoes, 2 cups of dry lentils, 8 cups of vegetable broth, Salt and pepper, to taste and 1 cup of chopped kale.
To make this Lentil Soup, grab out a large pot. Heat your olive oil over medium heat. Add the diced carrots, chopped celery, and diced onion. Saute them for about 5 to 6 minutes. Next, add the garlic powder, Italian seasoning, diced tomatoes, lentils, vegetable broth, salt, and pepper, to taste. Stir everything together and bring the mixture to a boil. Reduce the heat to low and simmer for 30 minutes. Add the chopped kale and continue to simmer the soup until the kale is slightly wilted. Serve with crackers or bread and Enjoy!

Made this and used red lentils. It was absolutely delicious. Used a lot of pepper and it spiced it up. Made so much I have frozen three meals!!!

OMG… this is just how I make my Lentil soup, I add Mrs. Dash, Curry powder and turmeric to my recipe.

I made this soup the first time with red lentils and it was delicious but mushy. I tried again and the flavor was wonderful but so mushy I had to throw it away😞. I’m just wondering if I should use brown lentils for this soup??? Suggestions?? as I truly love the flavor?? The consistency was like a hard mold of clay??? The flavor is amazing!
