Hasselback Potatoes

Ingredients

  • 4 large 4 russet potatoes

  • 1/4 cup 1/4 olive oil

  • 2 tablespoons 2 butter, melted

  • salt and pepper, to taste

  • 1/4 cup 1/4 fresh parsley, chopped

  • cooking spray for pan

  • optional: baked potato toppings

Directions

  • Preheat oven to 400°F. Line a baking pan with foil and spray with cooking spray. 
  • Place potatoes on a cutting board between two wooden spoons or chopsticks. Slice the potatoes into ¼ inch thick slices. Repeat with remaining potatoes.
  • Next, in a small bowl, mix together melted butter, olive oil, salt and black pepper.
  • Use a basting brush to brush butter mixture on and in between potato slices.
  • Bake for 1 hour until tender.
  • Remove from oven and top with fresh chopped parsley, basil and any additional toppings of your choice. Serve and Enjoy!

To make these Hasselback Potatoes, preheat the oven to 400°F/200°C. Line a baking pan with foil and spray with cooking spray.
