Chicken Taquitos

I was first introduced to the concept of chicken taquitos after a fellow food lover in my circle gave me their recipe. The idea behind my take on the classic Mexican dish is to make it easier to prepare while still maintaining all the flavor of the original. I’ve made some slight changes to the traditional method to make it faster, healthier, and even more delicious!

Chicken taquitos are great way to get a delicious, quick, and easy meal that is sure to please a crowd. They are also a great finger food, making them a great party snack.

Ingredients

  • 2 tbsp 2 olive oil

  • 1 large 1 onion, chopped

  • 2 cloves 2 garlic, minced

  • 2 pounds 2 chicken breasts, cooked and diced

  • 1 tsp 1 ground cumin

  • 1 tsp 1 chili powder

  • 1 tsp 1 smoked paprika

  • 1 tsp 1 kosher salt

  • 1/2 tsp 1/2 ground black pepper

  • 1/4 cup 1/4 chopped fresh cilantro

  • 1/4 cup 1/4 chopped fresh parsley

  • 1/4 cup 1/4 chopped fresh oregano

  • 1/2 cup 1/2 crumbled queso fresco

  • 4 4 corn tortillas

Directions

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes. Add the chicken, cumin, chili powder, smoked paprika, salt, and pepper. Cook until the chicken is heated through, about 5 minutes.
  • Stir in the cilantro, parsley, and oregano and cook for 1 minute. Remove from the heat and stir in the queso fresco.
  • Pre-heat the oven to 375 degrees
  • Place a corn tortilla on a work surface and spread a spoonful of the chicken filling onto one half of the tortilla. Fold to enclose the filling and transfer to a baking sheet.
  • Repeat with remaining tortillas and chicken mixture.
  • Lightly spray the taquitos with cooking oil spray and bake in preheated oven for 12-15 minutes.
  • Remove from oven, let cool and you can then add any toppings as you desire.

Notes

  • The recipe may allow for more than 4 tortillas, adjust as needed.
