  • 1 1 onion (diced)

  • 1 tsp 1 paprika

  • 3 cups 3 cooked chicken cut into bite size pieces

  • 4 cans 4 white beans

  • 4 cups 4 low sodium chicken broth

  • 3 cups 3 frozen corn kernels

Directions

  • Heat a large pot over medium high heat then add the onions and bacon pieces followed by a pinch of salt. Cook for about 7 minutes, stirring occasionally until the veggies are soft and browned.
  • Add garlic, cumin, oregano, and paprika and stir for another minute until fragrant. Add olive oil if needed to fry everything together nicely.
  • Add the cooked chicken pieces to the pot along with canned beans, stock, pepper flakes if using them, corn kernels (turn off heat) stir everything together gently until combined then bring the chili to a simmer over low heat with lid slightly open.
  • Let it simmer uncovered for another 35 minutes or longer if desired adjusting seasoning as needed would be delicious too – there should be plenty of liquid left but if it seems overly thick you can add more stock/water while cooking depending on your tastes preference.
  • Serve warm, and enjoy!

  • To make it a bit spicier you can add jalapenos!
