Veggie Angel Hair Pasta

Ingredients

  • For the Pasta:
  • 1 package Angel Hair pasta, cooked

  • For the Vegetables:
  • 2 tablespoons olive oil

  • 1 yellow squash, chopped into bite-sized pieces

  • 1 zucchini, chopped into bite-sized pieces

  • 3 bell peppers, diced (assorted colors)

  • 1 cup mushrooms, chopped

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • For the Sauce:
  • 24 ounces your favorite tomato pasta sauce

  • 1/2 cup water

Directions

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sauté squash, zucchini and mushrooms for 6 minutes.
  • Add the bell peppers to the skillet, season with garlic powder and Italian seasoning and cook for 5 more minutes.
  • Reduce the heat to medium-low. Add the jarred pasta sauce. Mix and simmer for 2 more minutes.
  • Remove the heat and serve over Angel Hair pasta. Enjoy!! 

To get started on making this Veggie Angel Hair Pasta, you will need, 1 package of cooked Angel Hair pasta, 2 tablespoons of olive oil, 1 yellow squash that is chopped into bite-sized pieces, 1 zucchini that is chopped into bite-sized pieces, 3 bell peppers, diced (assorted colors), 1 cup of chopped mushrooms, 1 teaspoon of garlic powder, 1 teaspoon of Italian seasoning, 24 ounces of your favorite tomato pasta sauce, and ½ cup of water. Feel free to use starchy pasta water. However, that is not necessary for this recipe! 

As you can tell, not many seasonings are needed because the vegetables are what you want to stand out here. Your jarred sauce should already be seasoned well so, there is not much need for any additional salt or pepper. Just be sure to use your favorite jar of tomato sauce so that you can enjoy this dish! 

Any of color bell peppers can be used. However, the more vibrant and assorted they are, the prettier the sauce is. So, be sure to keep that in mind. Also, each bell pepper has a different flavor to it. Red and Yellow are the sweetest. Green is more earthy and bitter. Orange is in between. If you use all of them, then you’ll get a little taste of everything! Red Bell Peppers are HIGHLY recommended for this recipe.

To make this, first heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Then, sauté the squash, zucchini, and mushrooms for about 6 minutes. They should be soft and slightly browned. Next, add the bell peppers to the skillet, and season everything with garlic powder and Italian seasoning. Cook everything for 5 more minutes. Reduce the heat to medium-low and add the jarred pasta sauce. Mix and simmer everything for 2 more minutes. Remove the sauce mixture from the heat and serve over Angel Hair pasta. Enjoy every bite! Make sure that you’re always watching the vegetables so that they don’t burn. Mushrooms contain a lot of water so, they do help to add liquid to the skillet. This helps the other vegetables to steam so that they don’t burn too quickly.
