Meal Prep Chicken Breasts

With the start of the New Year, a lot more people are beginning to meal prep in hopes to create healthier eating habits. However, meal prep can be dreadful for some. It shouldn’t have to be. These chicken breasts are easy to prepare and cook. Before you know it, you will have a delicious protein cooked and ready to be packed away with any sides of your choice.

Ingredients

  • For the Chicken:
  • 3 large 3 boneless and skinless chicken breasts, flattened

  • For the Marinade:
  • 1 tablespoon 1 paprika

  • 1 teaspoon 1 garlic powder

  • 1 teaspoon 1 Italian seasoning

  • salt and pepper, to taste

  • 2 tablespoons 2 olive oil (plus more for cooking)

  • 1 tablespoon 1 fresh squeezed lemon juice

Directions

  • In a medium sized bowl, whisk together paprika, garlic powder, Italian seasoning, salt, pepper, olive oil and lemon juice. 
  • Coat each chicken breast evenly with marinade. 
  • Place in a large ziploc bag. Marinate for at least 30 minutes.
  • Remove from the refrigerator and  heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 5-6 minutes on each side. Or, until internal temperature reaches 165°F.
  • Remove from the skillet and allow to rest for 10 minutes before slicing and enjoying/using for meal prep.

The ingredients that you will need to make these Meal Prep Chicken Breasts are 3 large flattened boneless and skinless chicken breasts, 1 tablespoon of paprika, 1 teaspoon of garlic powder, 1 teaspoon of Italian seasoning, salt, and pepper (to taste), 2 tablespoons of olive oil (plus more for cooking), 1 tablespoon of fresh-squeezed lemon juice.

To prepare and cook these Meal Prep Chicken Breasts, first, begin by making the marinade. To do so, grab out a medium-sized bowl and whisk together paprika, garlic powder, Italian seasoning, salt, pepper, olive oil, and lemon juice. Next, coat each chicken breast evenly with the marinade. Place the coated chicken in a large Ziploc bag. Marinate the chicken for at least 30 minutes. You can marinate them for up to 24 hours if you so desire!

To cook them, remove the chicken breasts from the refrigerator. Then, heat the olive oil over medium-high heat. Sear the chicken breasts for 5-6 minutes on each side. Or, until the internal temperature reaches 165°F. Remove them from the skillet and allow them to rest for at least 10 minutes before slicing and enjoying/using for meal prep. That’s all there is to it. This will become your go-to recipe in no time!

I love making this chicken and packing it up with sides such as rice, roasted sweet potatoes, and green beans. Then, when I am ready to eat, I simply heat it all together.
