Lemon Mushroom Chicken

It was the middle of the week, and I was feeling inspired to try something new for dinner. Directions

  • In a large nonstick skillet, heat olive oil over medium heat and add chicken, garlic powder, onion powder, salt and pepper. Cook chicken until cooked through and golden.
  • Add minced garlic and diced mushrooms to the skillet and cook until garlic is fragrant and mushrooms are tender.
  • Deglaze the pan with the white cooking wine, stirring to scrape up any browned bits.
  • Pour in lemon juice and add green beans to the skillet. Cook for an additional 2-3 minutes.
  • In a separate saucepan, bring water and rice to a boil. Reduce heat to low, cover pan with a lid, and simmer for 20 minutes or until all the liquid is absorbed.
  • Once the rice is done, top it with the skillet of chicken and vegetables. Sprinkle with Parmesan cheese, and serve.

Notes

  • You can add some spice by adding Cajun or cayenne pepper.
