Veggie Quesadilla

Do you like quesadillas? If so, you are for sure in a treat with this Veggie Quesadilla!  And, if you are a meat lover, then you for sure will not miss the meat in this recipe. Making this Veggie quesadilla is extremely easy and it only requires a few ingredients.

I made this one the other night on a whim. I truly did not feel like going to the grocery store, but I was craving Mexican food. It was close to the end of the week so I knew that I was low on ingredients, but still had to use up any leftover produce.

Fortunately, I typically prepare my vegetables ahead of time by slicing, icing, and bagging. So, I was in luck when I found some diced bell peppers and onions. Not a lot of prep work was required of me. So, I got straight to cooking.

Ingredients

  • 2 teaspoons 2 vegetable oil, divided

  • 1 large 1 tortilla

  • 1/4 cup 1/4 fresh or frozen mixed bell peppers and onions, diced

  • 1/2 cup 1/2 canned pinto beans

  • 2 teaspoons 2 taco seasoning

  • Mexican shredded cheese

  • Salsa of choice for serving

Directions

  • In a large skillet, heat 1 teaspoon vegetable oil over medium heat and saute bell pepper onions, and taco seasoning until tender (about 5 minutes).
  • Add pinto beans and toss around. 
  • Place mixture on a tortilla and top with cheese. Fold over to close. 
  • To the same skillet, heat 1 teaspoon oil and cook quesadilla on medium heat for about 2 minute per side or until cheese is melted. 
  • Remove from skillet. Slice and serve with salsa. Enjoy!

I also grabbed a can of pinto beans. Only a fraction of the can was needed. Of course, I saved the rest to use for a different meal! The peppers, onions, and beans were heated together in the skillet. Of course, they needed flavor. So, in went the taco seasoning! Be sure to not get too heavy-handed with this. You only need a little. A teaspoon or two at most will do the flavoring job just right. 

You can make taco seasoning with a mixture of many different spices and seasonings. However, premade taco seasoning is rather easy to find at many grocery stores. Taco seasoning is also versatile. So, you can use it on quesadillas, fajitas bowls, nachos, or even plain veggies to spice them up a bit.

Just a little bit of oil is needed to make this recipe too. Two teaspoons are all you need. You might even be able to go lighter. Just eyeball it. I recommend that you use a lighter flavored oil to cook this quesadilla. That way, you will be able to taste the flavors of everything instead of it being overpowered by a heavily flavored oil. That is no fun! You want to enjoy your meal wholeheartedly! 

I chose to go with vegetable oil. Grapeseed oil is great to use as well. Just stay away from sesame or coconut oil! Those two oils are much too potent for the flavors we are going for with this Veggie Quesadilla recipe. 

This recipe is vegetarian. However, if you would like to make it vegan, then use vegan-friendly cheese. Just be sure to find one that melts well or make a vegan cheese spread of your own.
