Vegetable Fajitas

You’ve never had vegetable fajitas like these. These Vegetable Fajitas are packed with flavor! They are spicy and offer a crunch like no other. Once you take a bit of these, you’ll be begging for more. 

What is so great about these Vegetable Fajitas is that they require only two vegetables. However, they are so hearty and filling. So, get out your cutting board, skillet, and crank up your stove. Let’s get to chopping, cooking, and eating!

Ingredients

  • 2 tablespoons 2 vegetable oil

  • 4 large 4 bell peppers (any color), seeded and thinly sliced

  • 1 1 sweet onion, thinly sliced

  • 3 tablespoons 3 taco seasoning

  • 1 teaspoon 1 garlic powder

  • 3 tablespoons 3 water

  • 8 8 medium flour or corn tortillas

Directions

  • In a large skillet, heat vegetable oil over medium-high heat.
  • Add the sliced bell peppers and sliced onions. Cook for 5 to 6 minutes.Be sure to toss so everything cooks evenly.
  • Add taco seasoning, garlic powder, water and toss. Cook for 5 more minutes.
  • Remove from skillet and place on top of tortillas.
  • Serve with any desired toppings and sides. Enjoy!

The best skillet to make this meal in is a cast-iron skillet. I’ve made these in both a cast iron skillet and a regular skillet. Cast-iron just offers so much more flavor. It is probably due to the past flavors of other meals being carried over to the fajita ingredients. So, if you own a cast-iron skillet, then I recommend that you use one. If not, then don’t worry because they will still be delicious. Simply, follow this recipe. 

Typically I use a cast-iron skillet. However, this particular day, I was using my cast-iron to bake a batch of fudgy brownies. If you’re wondering how those came out, they were delicious and crispy around the edges. And, I ate every morsel throughout the week! Ok, enough about the brownies. Let’s get back to discussing these even more delicious Vegetable Fajitas. 

The ingredients that you will need to make this recipe are 2 tablespoons of vegetable oil, 4 large bell peppers that are seeded and thinly sliced, 1 sweet onion that is thinly sliced, 3 tablespoons of taco seasoning, 1 teaspoon of garlic powder, 3 tablespoons of water, and 8 medium flour or corn tortillas. To make these, first, heat the vegetable oil in a large skillet on medium-high heat. Next, add the sliced bell peppers and sliced onions. Cook those 5 to 6 minutes. Be sure to toss them around so that everything cooks evenly. Then, add the taco seasoning, garlic powder, and water. Toss everything around with a spatula. Cook everything for 5 more minutes. Remove the vegetables from the skillet and place them on top of your tortillas. Your tortillas can either be room temperature or warm. Serve these Vegetable Fajitas with any desired toppings and sides. Finally, Enjoy your meal! It’s truly as simple as that, folks!
