Tomato Soup

What fond memories I had as a child having my very first bowl of Tomato Soup. To quote the Campbell’s Soup slogan: It was: “Mmm Mmm Good!” I remember being home from school and my mom giving me a bowl of  Campbell’s Tomato Soup. She paired it with a grilled cheese sandwich. My love for a good meal was born that day! 

That is why I wanted to share my homemade Tomato Soup recipe with you.  I do not know what ingredients Campbell’s Soup used, but I love to experiment in my kitchen. I tend to adhere to using what is already in my pantry.

Ingredients

  • 4 tablespoons 4 unsalted butter

  • 1 small 1 diced onion, any kind

  • 28 ounces 28 canned tomatoes, whole or crushed

  • 1 cup 1 vegetable stock

  • 1 teaspoon 1 garlic powder

  • salt and pepper, to taste

Directions

  • In a medium-sized saucepan, melt butter over medium heat and sauté onion for about 5 to 6 minutes.
  • Add canned tomatoes, vegetable stock, garlic power, salt and pepper. Stir together and cook for 5 more minutes or until hot.
  • Transfer mixture to a blender and blend to combine well.
  • Serve and Enjoy!

While I enjoy going grocery shopping, I do not like running back and forth to the supermarket, if I do not have to do that. Who doesn’t go to the supermarket to get one thing and come out with 14 other items? I am certainly guilty of impulse shopping in grocery stores, especially if I go in hungry. I think grocery stores lure the hungry that way. The hot food bar is my Kryptonite. That is why when I shop for the week, I make a list. I try my best to get everything on that one trip and not return until the following week. That is how I stay on track with my grocery list and my budget. This tip might work for you too.  

Fortunately, I had every ingredient that I needed for this easy Tomato Soup. The butter and vegetable stock gave it the flavor I was looking for in this recipe. The garlic powder, salt, and pepper to taste were the only three seasonings that I needed. The onion was the perfect touch. I used canned tomatoes. Feel free to use whole or crushed tomatoes.  

I cannot stress enough how easy this soup was to make. I truly hope you will serve Tomato Soup to your family too. You  might even have the whole family saying in unison, “Mmm Mmm Good!”
