Roasted Vegetable Medley

When I was a kid, my parents used to let my sister and me watch a show called Veggie Tales.  I am going to dump the lyrics here, but if you don’t recall the show, then YouTube it. I just recently listened to the song and it took me right back to being a toddler. That’s the power of a memory.  I tend to associate food with a lot of experiences because I love to eat. And, I love to cook. And, I love to sing and write.

As a kid, I ate a LOT of vegetables. Here are the Veggie Tales lyrics:

Roasted Vegetable Medley

Ingredients

  • 4 cups 4 vegetable medley (blend of baby carrots, broccoli, cauliflower)

  • 2 tablespoons 2 dijon mustard

  • 1 tablespoon 1 olive oil

  • 1 teaspoon 1 honey

  • 1 teaspoon 1 thyme

  • 1/2 teaspoon 1/2 garlic powder

  • Salt and pepper, to taste

Directions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • Next, in a large bowl, toss together dijon mustard, olive oil, honey, thyme, garlic powder, salt and pepper.
  • Add baby carrots, broccoli and cauliflower to the bowl.
  • Toss around to coat evenly.
  • Pour vegetables on baking sheet and spread them apart.
  • Bake for 20 to 25 minutes, or until tender to your liking.

This song makes me remember why I love to cook vegetables. Now that I am an adult, I love experimenting with all kinds of vegetable dishes. And, Yes, I do talk to tomatoes. But, I have yet to waltz with potatoes down the produce aisle. I’m not trying to have the store manager call the paramedics.   

You are going to just go Insane over this Roasted Veggie Medley. And, just three simple vegetables: Carrots, Cauliflower and Broccoli. I simply tossed them with some Dijon mustard, garlic powder, fresh thyme, honey, olive oil, salt, and pepper and roasted them.
