Potato Salad

One of the great things about potato salad is that it can be eaten all year long. Of course, for the holidays, it would be a sin not to have it on the menu. This is why I decided to share my Potato Salad recipe with you.

Ingredients

  • 6 medium 6 Yukon gold potatoes, peeled

  • 1 cup 1 mayonnaise

  • 1 teaspoon 1 white vinegar

  • 1 tablespoon 1 yellow mustard

  • 1 teaspoon 1 salt

  • 1/2 teaspoon 1/2 black pepper

  • 2 stalks 2 celery, chopped

  • 1 teaspoon 1 granulated sugar

  • Paprika for garnish

Directions

  • Boil potatoes for 15 to 20 minutes until tender when poked with a fork.
  • Cut potatoes into cubes.
  • In a large bowl, mix together mayonnaise, vinegar, mustard, salt, pepper, celery, celery seed and sugar.
  • Add potatoes and stir together.
  • Chill for 3 to 4 hours.
  • Serve and Enjoy!

I like to experiment with lots of dishes. I loved the way both of my grandmothers made their potato salad. I have emulated their recipe when I want some Good Ole’ Southern food. But, for this potato salad recipe, I decided to put my own spin on it. I like crunch. And, to give this potato salad the crunchiness that I was craving, I added celery. And, who doesn’t like celery? Celery has a very distinct taste. Both of my grandmothers used celery seeds for their recipe and yes, they were truly on to something.

I discovered that celery seeds and celery have some amazing health benefits. I have always liked celery, even as a kid. I loved eating celery sticks dipped in a delicious dip or even peanut butter. Celery is good eaten alone too because it is a filling vegetable. Who doesn’t like eating celery sticks with a plate of chicken wings? It is definitely a Super Bowl staple every single year.

I decided to Google the health benefits of celery. I had no idea that celery helps to soothe inflammation in your body. If you have a flare-up, grab a celery stick or two. Celery also lowers blood pressure, protects your liver health, and can even help control weight sans the chicken wings, among numerous other health benefits.

Now that you’ve had your history lesson on the benefits of celery, let me share with you how good this potato salad turned out. It was loaded with all of the right ingredients and if you decide to make it, which I hope that you do, you will be quite satisfied. My family enjoyed the healthy portion that I gave them and went back for seconds. I was quite pleased that I could satisfy their palates.

Again, the celery gave it just the zing and crunch that this potato salad needed. Not only does it taste absolutely delicious, but it also packs quite a punch in flavor. Potato salad does not need a lot of one particular ingredient to taste good. You will need a dollop of this and a dollop of that. I learned that from both of my grandmothers.
Go easy on the seasonings. Never over salt or be heavy-handed with your seasonings. I have added the measurements for you if you choose to make this dish. If you feel that your taste buds need a little more of something, then I give you permission to improvise this recipe.

There are so many different ways to make potato salad. I have tried many different versions, even the store-bought ones. I tend to go back to the same supermarket that has the best-tasting potato salad for my taste buds, especially if I don’t feel like making a batch just for myself.   1. I did not see celery seed mentioned in the ingredients list (maybe I just missed it) so I am wondering how much celery seed to add. It looks like a great recipe!
