Juicy Seasoned Baked Chicken

Juicy Seasoned Baked Chicken

Ingredients

  • 1 1 red bell pepper, seeded and diced

  • 1 small 1 sweet onion, sliced

  • 2 pounds 2 skin on, bone-in chicken (1 breast, 4 legs used in this recipe)

  • 1 tablespoon 1 Italian seasoning

  • 1 tablespoon 1 garlic powder

  • 1 teaspoon 1 smoked paprika

  • 1 teaspoon 1 poultry seasoning

  • salt and black pepper, to taste

  • 2 tablespoons 2 butter

  • 1/4 cup 1/4 water

Directions

  • Preheat the oven to 350°F/177°C.
  • Place diced bell peppers and sliced sweet onions in a 9×13 baking dish.
  • Season all pieces of chicken with Italian seasoning, garlic powder, smoked paprika, poultry seasoning, salt and pepper. 
  • Place in the baking dish on top of onions and peppers.
  • Add pieces of butter on top of the chicken and Pour ¼ cup water on the vegetables.
  • Bake for 45-50 minutes or until the internal temperature reaches 165°F when a meat thermometer is inserted.
  • Remove from the oven and allow to rest for at least 10 minutes. Serve and Enjoy!

I personally love experimenting with different kinds of chicken recipes. I hope you do too. You just can’t go wrong with chicken. Even if you accidentally dry it out as we all have, it is the perfect meat to disguise with a little pasta and sauce or rice and veggies. That’s just a little cooking tip for you, just in case that happens. However, if you stick to this recipe and the cooking instructions you will have the juiciest baked chicken breast and legs that you’ve ever made.

I was quite surprised that for very little effort, other than cleaning the chicken and seasoning it, how great the reward on the other side was. My palate was singing a song of joy knowing that it would be a regular dish every single week. I love easy and I hope you do too. And, while I love cooking and I love being in my kitchen, I also love doing other fun things and keeping my life simple. That is what this quick dish will do for you and your family. Simplify a little of your life just by making a recipe that is quick, easy and stress free. Then you get to enjoy your family time, doing all the things you enjoy doing together, while having a good meal and bonding at the same time. Food brings out the best in us. Especially a well balanced meal. In addition to these juicy baked chicken breasts, I will do some add-ons. I like a good carb and a tasty vegetable to eat with it. I eat spinach like the cartoon character, Popeye the Sailor Man. I like to sauté it when I’m pairing it with a hot protein dish such as this Juicy Seasoned Baked Chicken. Spinach compliments chicken quite well. Of course, you are going to want a carb with this dish. I love mashed potatoes with mushrooms. I also love mashed sweet potatoes without mushrooms. I add a dollop of butter to my potatoes, and they are so creamy and good to eat with this juicy baked chicken dish.

My advice for making this juicy chicken recipe is to set your timer. While you are busy making your sides and setting the dinner table, the timer will beep before you know it, and you and your family will be ready to enjoy the fruits of your labor. Of course, you won’t have to labor too hard for this one, but who will know? Just you! Your family will be quite busy, devouring this dish and racing to get seconds. 

If and I say “If” cautiously, there are any leftovers, just put them in your fridge and reheat the next day for a quick lunch. I like to make more than enough for extra servings. I got that from my grandmothers. When I visited them in the South, there was always a plethora of food awaiting our arrival and we even had some to eat later.

Looking back, those times were simple and stress free. I fell in love with cooking as a young girl and cultivated the love of cooking from both my grandmothers. They were the best cooks around and they left me with a legacy that I know that they wanted me to have: The opportunity to learn from them,so that I could embrace and generously share my gift of cooking with someone else.
