Barbecue Chicken Breasts

I am the kind of person who if I don’t get my protein, I get Hangry. I am not my best self when I am hungry and angry, which equates to Hangry. Even as a little girl, my mom knew she had to bring me a snack, when she picked me up from school. I always had a hardy appetite. I was a protein girl and she knew how to put a smile on my face. 

I’m guessing that is why I get Hangry now if I wait too late, before having a piece of chicken or fish. I tend to prepare my food for the week, so I can have something handy right away. Why? I love to eat and I need to be satisfied when I have a meal. My mom closed the kitchen long ago with her cooking. She is glad I have reached adulthood, to be responsible for my own life and definitely snacks.

Barbecue Chicken Breasts

Ingredients

  • For the Chicken Breasts:
  • 2 teaspoons 2 grape seed oil

  • 2 large 2 boneless and skinless chicken breasts, sliced widthwise

  • 1 teaspoon 1 garlic powder

  • 1 teaspoon 1  smoked paprika

  • Salt and pepper to taste

  • For the Barbecue Sauce:
  • 1/2 cup 1/2 ketchup

  • 2 tablespoons 2 brown sugar

  • 1 tablespoon 1 apple cider vinegar

  • 2 teaspoons 2 Worcestershire sauce

  • 1 tablespoon 1 Dijon mustard

  • 1 tablespoon 1 hickory liquid smoke

  • 1/2 teaspoon 1/2 garlic powder

  • 1/4 teaspoon 1/4 black pepper

Directions

  • For the Chicken Breasts:
  • Preheat oven to 400°F/200°C. 
  • Season chicken breasts generously with oil, garlic powder, smoked paprika, salt and pepper.
  • Place chicken breasts in a baking dish and bake for 20 to 25 minutes.
  • For the Barbecue Sauce:
  • In a bowl, mix together ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, mustard, hickory liquid smoke, garlic powder, and black pepper.
  • Coat chicken in barbecue sauce and place it back in the oven for an additional 2 minutes.
  • Remove chicken from the oven. Allow to rest for 10 minutes. 
  • Serve with sides and enjoy! 

These Barbecue Chicken Breasts will melt in your mouth. I, personally like organic chicken. I don’t mind paying a few extra bucks to eat organic meat. My parents turned me on to organic foods when I was younger and some things just stick with you. Grocery store prices have truly escalated. Today, you have to be a smart shopper. My tip is to cut out the extra junk and load up on the protein and vegetables. Then, if you can, try and food prep, so you don’t end up Hangry too.

I am sure you’ve made Chicken Breasts before. They are super easy to make. Making the barbecue sauce was the fun part for me. I love experimenting with seasonings. I am a seasoning queen. Besides, any good dish is all in the seasonings.
